Hello fellow vegans and soon to be vegans. My Thanksgiving was wonderful. My son was home for the first time in six years. He always goes to his paternal family for holidays (I am not invited), but they decided to celebrate on another day. Anyhoo....I made a lovely quinoa with garlic and other spices, spinach, a rainbow of sauteed vegetables and a mixture of cooked cabbage. These were bok choy, fennel and Napa cabbage. YUM!!
